1. Place pot on a medium heat and add oil.
2. Sauté onion, peppers, garlic, carrot and chili powder for three minutes.
3. Add all remaining ingredients, except for kale, cover and bring to boil.
4. Reduce the heat and simmer until lentils are cooked through (check your package), normally should be around 30 minutes. Add kale and stir, simmer for additional five minutes.
1 1/2 l chicken bone broth
1 cup dry lentils
1 handful of baby kale
2 gloves garlic
1 large carrot, chopped
1 red onion, chopped
4tbsp tomato paste
1 jalapeno pepper, minced (only in case you like spicy!!!)
1 tbsp chili powder (please change the quantity if do not love spice)
2 tbsp olive oil
1tsp sea salt
Yes yes, I know, the lentil stew does not sound so sexy, nor tasty. However, I can assure you this is a nourishing, warming and nutritionally ideal soup, especially for the colder months of the year.
Lentils are high in fiber and they help to stabilise blood sugar. Nearly 20gr of protein per 300gr, a small amount of lentils goes a long way, making them ideal plant based protein to include in your diet.
