Mediterranean summer quinoa salad

Prep Notes

1. Rinse and cook the quinoa following the instructions on the package

2. Transfer quinoa to a serving bowl and allow to cool.

3. Whisk together olive oil, lemon juice, salt and oregano

4. Combine cooled quinoa, dressing and remaining ingredients. Taste for seasoning
