1. Cook the cauliflower in a pot of ware with a pinch of salt 3-4 minutes until crisp but not too soft. Drain in a colander and pass by cold water to stop the cooking process.
2. Let the cauliflower to dry a bit and grate with the grater attachment in a food processor. It will look like rice. Transfer to a serving bowl.
3. Stir in remaining ingredients and toss to combine.
