Cabbage and avocado slaw with hemp seeds

Prep Notes

Combine all ingredients in a bowl except avocado. You can really massage and mix with your hands in order to tenderise the cabbage. Add avocado at the last minute before serving to avoid browning!


6 cups of shredded cabbage (you can mix green or purple or not as you like)

1/2 sweet red bell pepper or shredded carrot

1 large avocado, diced

3 tablespoons extra virgin olive oil

3 tablespoons fresh lime juice

1/4 cup diced scallions

1/2 cup hemp seeds

6 tablespoons chopped cilantro

1/2 teaspoon sea salt
